Panino is not the newest character on “The Sopranos” – it’s the hottest sandwich in New York. Although it comes in many varieties, the panino – “little bread” – is generally a grilled concoction of sliced meat and cheese (or it can be vegetarian) with a little oil and perhaps a sprig of rosemary and garlic between two slices of foccaccia.

Ingredients range from the simple to the exotic, but the secret of this sandwich is in the grilling.

Now you can have a commercial-quality grill to use at home.

The Panini Professional Grill, with deep-ridged, cast-iron grilling plates, hinged weighted lid, temperature controls and indicator lights, quickly and evenly cooks sandwiches – or a steak – at up to 575 degrees. (It’s $899 through the Williams-Sonoma’s catalog or online at williams-sonoma.com.)
