When fish or cutlets are on the menu, portions of even thickness will cook more uniformly, preventing dried-out ends.

Folding thin tails back over the fillet usually does the trick for fish. Even out pork or chicken cutlets by pounding them between two sheets of cellophane wrap with a meat mallet or the bottom of a heavy pan.
