Chef Shane McBride’s menu is a slightly less complicated reworking of the American ilk, where Caesar salad meets frisee aux lardons in a mix of shredded romaine, croutons, a poached egg and bacon; “dirty rice” risotto incorporates duck confit, smoked duck ham and andouille sausage; and short ribs are braised in root beer.
