DEL Posto has lost its talented chef de cuisine to another high-profile restaurant. Chef Kevin Garcia will be making the move from Mario Batali’s cavernous landlord-challenged eatery by the end of this month to replace Tom Valenti as executive chef of the cozier ‘Cesca on the Upper West Side.

Valenti left ‘Cesca, which is owned by the Off the Menu Restaurant Group, last January to concentrate full-time as the chef of Ouest – also owned by the Off the Menu company. Valenti is in negotiations to buy the restaurant with other partners.

Garcia’s resume includes stints with chef Jean-George Vongerichten and restaurateur Drew Nieporent.

* Haru is taking its sushi-slinging act downtown. The more serious offshoot of the Japanese sideshow Benihana will open a branch in the Mercantile Exchange Building at 1 Wall St. Court.

The 4,500-square-foot space will be one of the largest of its eight locations on the East Coast. The deal was brokered by Jeffrey Roseman and Ken Hochhauser of Newmark, who are scouting other locales for more branches.

* If Dom Perignon weren’t already pricey enough, those with extra cash to blow on the bubbly can shell out $2,500 for a bottle designed by Karl Lagerfeld.

The limited-edition 1998 vintage Champagne called “A Bottle Named Desire” features gold studs that emulate the bubbles and comes in a numbered jewel case with the ponytailed designer’s signature.
