AND then there was one — Baldwin, that is.

Billy and Stephen Baldwin’s oft-maligned restaurant, Alaia, has closed.

Opening in its lower-Fifth Avenue place will be a redecorated, as-yet-unnamed restaurant with new management, new chef and no brother Billy.

In its heyday, critics gave Alaia satisfactory ratings for food, but slammed the scene as “Moomba-pequa,” a reference to its star-struck Long Island clientele.

DISH OF THE WEEK: Trata’s large lobster — split and sautéed in olive oil, thyme and garlic, then transferred to a clay pot, glazed with Metaxa brandy and topped with tomato and wine, and cut egg noodles, then baked and served to patrons in the clay pot.
