Other than the drunk stockbroker (trainee, we presume) – at the next table – repeatedly yelling “Yeah, baby!” into his cell phone (oh, behave), the atmosphere at Bolo is shagadelic fun. And part of that fun is the restaurant’s bold-colored decor, not to mention Bobby Flay’s fare with flair.

The eatery, owned by Flay and Laurence Kretchmer, opened in 1994, only a few months after the then 28-year-old Flay (who also owns Mesa Grill), received the 1993 James Beard Chef-of-the-Year Award. Five years later, the Spanish themed place is still packing people in for paella.
