Chicago cult chef Grant Achatz and Nick Kokonas are launching a New York outpost of their game-changing cocktail bar, The Aviary, and its speakeasy sister, The Office.

Construction has begun at the Mandarin Oriental hotel at Columbus Circle, and both hot spots are slated to open this summer. The Aviary will seat 90 people and The Office 40. Both will be on the hotel’s 35th floor — 280 feet above street level.

“Because this is a hotel, their offerings will also include breakfast, lunch and dinner. Afternoon tea is still to be determined,” a hotel spokeswoman said.

Achatz, a three-star Michelin chef at Alinea, is known for his laboratory-like concoctions — think cocktails made with liquid nitrogen. The Aviary will ply this trade, while The Office plans classic cocktails and pricey spirits.
