Jews, rejoice — a kosher cheeseburger exists.

Jewish dietary law prohibits consuming both dairy and meat. But the Impossible Burger — a meat substitute so convincing, White Castle now sells it — has officially been certified kosher.

“And because our meat is purely plant-based, for the first time we can all enjoy a delicious — and strictly kosher — cheeseburger,” David Lipman, the company’s chief science officer, said Tuesday.

The burger is made with wheat protein, potato protein, coconut oil and its secret weapon: heme, or an iron-containing molecule that’s especially abundant in animal tissues that helps it taste like meat.
