Chloe Coscarelli hopes to save us all — one guac burger at a time.
OK, if not exactly save us, at least show the carnivores and cheese-lovers among us that forgoing dairy, meat, fish and eggs is the way to go.
It seems to be working for the 27-year-old chef, whose glossy hair and model figure make her the pinup gal for veganism.

And then there’s her food: Coscarelli is the first vegan winner of “Cupcake Wars,” and she opened her first restaurant, By Chloe, in the West Village this summer to warm reviews. Even meat lovers are seduced by her burger — a blend of quinoa, black beans, sweet potatoes and spices topped with guacamole and corn- jalapeño salsa. She plans to open a second restaurant next year in the Flatiron District.
A Los Angeles native, Coscarelli has been vegan since childhood. “I loved my pets so much, it didn’t make sense to be eating animals,” she says.
But she’s not self-righteous.
“There are perfectly amazing people out there who don’t eat vegan” ­— her boyfriend among them. “He says he can’t tell the difference between our shiitake bacon and regular bacon,” she says. “It shows I’ve done my job!”
