Cipriani restaurant is trying to dump one of its senior waiters like day-old veal, according to a lawsuit filed yesterday.

The owner of the upscale eatery “wants to get rid of the old guys, starting with Carlo Piu,” the waiter (pictured) charged in the Manhattan Supreme Court suit. Piu, 57, who has been working for Harry Cipriani at 781 Fifth Ave. since 1991, claims that a manager and even busboys taunted and harassed him.

Piu’s lawyers, Michael Borrelli and Alexander Coleman, said the abuse created a hostile work environment. A Cipriani spokeswoman called the allegation “baseless.”
