Talk about a slow burn! A disgruntled restaurant worker waited a year before trashing and trying to torch his former workplace, then wound up locked inside before being served up to cops, police said.

Jerry Cusack, owner of the Babylon Carriage House Restaurant on Long Island, said Douglas Hopkins had a drunken meltdown at his former workplace at 11 p.m. Sunday.

Hopkins went nuts, smashing his fist through a computer screen, destroying office equipment and making a bonfire of linen napkins, Cusack said.

The manager locked Hopkins inside until cops arrived.
