Murdered socialite Lois Colley was a fixture on the North Salem fox-hunting scene along with her rags-to-riches husband, who went from owning a small bakery to a mini-empire of McDonald’s restaurants.

Eugene Colley, 88, and Lois, 83, were members of the Waccabuc Country Club, and spent much of their time hosting hunts at their 300-acre compound, called Windswept Farm, in the bucolic Westchester town of North Salem.

“I’m extremely saddened,” Waccabuc manager John Assumma told The Post. “She was a true lady and a pleasure to see at the club. The staff adored her because she was very kind.”

“It’s so surreal,” he added. “It’s a very quaint neighborhood up here.”

Lois, who was found dead in the couple’s home on Monday, was also an active member of the Brewster-Carmel Garden Club.

“They’ve been part of the North Salem community for a long time. They’re a very close family,” North Salem town historian Susan Thompson told The Journal News, adding that the entire family was fond of riding horses.

“[Lois] goes to every hunting event,” Thompson said. “It isn’t a hunt without her there.”

The couple’s Colonial-style main house is set back about a mile from the road and overlooks the Titicus Reservoir.

“It’s scenic up here. It’s very quiet, very safe,” said neighbor Kate Hintz, 36. “All those typical stereotypes of small-town living, this is the place.”

“They have a very old estate, beautiful house, well kept,” she added. “We can see their horses and cows from the side of the property.”

Before he was a wealthy McDonald’s franchisee, Eugene owned a lone bakery in Brewster, where the couple lived before buying a farm in North Salem, Cynthia Curtis, chair of the North Salem Planning Board, told The Journal News. According to a public online listing, his successful franchisee company, The Colley Group LLC, was founded in 1967, and netted him millions.
