The devastated mom of a Long Island woman found stabbed to death in her apartment vowed revenge yesterday in an emotional Internet posting.

“Be assured, I will not rest until this cowardly beast is caught. May he rot in hell!” wrote Margie Pizzini on the MySpace page of her daughter Laura Pizzini.

Laura, 25, was found dead Friday in the Mastic apartment where the EMS volunteer lived alone.
